What are the benefits of sweeteners?

Sweeteners
• Sucralose: molecule derived from sugar sweetness highest (600 times that of sugar). Very stable, it can be used hot or cold.

This is why the word "sugar free" on the packaging of products containing polyols (such as chewing gum).

What are the disadvantages of sweeteners?

• Saccharin: unpleasant metallic aftertaste.
• Aspartame: poor resistance to heat and acidity that make it lose its sweet taste, which is why it is often associated with acesulfame-K more stable.
• Acesulfame-K: bitter aftertaste.
• Polyols: Risk of gastrointestinal disorders (abdominal pain, bloating, diarrhea, laxative effect).

What should I be wary?

Be wary of some products in which the absence of sugar is offset by a higher rate of fat (so read the label); abuse of drink "light" sweeteners in children and also in some adults.

Sweeteners or "fake sugars" are substances sweetness, but does not provide the calories of sugar.

There are two types of sweetener:

Sweeteners and cons-indications

Sweeteners are not recommended for children under 3 years.
The acceptable daily intake (ADI) is set sweeteners:
- For aspartame at 40 mg / kg body weight per day (knowing that the average adult is 0.05 to 0.4 mg / kg / day);
- For sucralose: 15 mg / kg / day;
- For saccharin: 5 mg / kg / day.

Usefulness of sweeteners

Sweeteners are interesting:

- To limit the consumption of sugars (which provide only empty calories, that is to say without any nutrient) as part of a diet because they reduce caloric intake;
- Diabetics, they offer an alternative to simple carbohydrates (sugars which pass rapidly into the blood and make blood sugar rise) allowing to enjoy the sweet taste without affecting blood glucose;
- The prevention of caries by reducing the consumption of sugar.

Diet products: what is it?

Diet products are "light" fat or sugar and should therefore provide less fat and sugar than normal products.

They may be labeled as "light", "mild", "light", "0%"

Diet products must indicate on the label the percentage reduction (fat or sugars) and their total caloric value.

What difference is there between diet products, and some products labeled "sugar-free"?

What are the disadvantages of diet products?

• Some low-fat products (prepared foods, mayonnaise, salad dressings, chips ...) may be alleviated at the expense of good unsaturated fatty acids (beneficial effects on cardio-vascular).
• Removing fat from food leads to elimination of fat-soluble vitamins (fat soluble) such as vitamins A, D and E.
This is why fat dairy products are rich in fat in these vitamins.
• Some low-sugar products sometimes have a higher fat levels for reasons of taste or presentation (including some chocolates).
Conversely, some biscuits "lights" are modestly lighter on fat but not sugar. And they are often larger (32 g) the classic cookies (12 g).

What is a food additive?

Food Additives

A food additive is a substance added in small amounts to a foodstuff in a technical purpose (storage, production, appearance ...), sensory (flavor, color, texture ...).

A food additive may:
- Be a natural substance (of mineral, vegetable or animal);
- Be a synthetic product (reproducing natural qualities);
- Be artificial (not existing in nature).

What are the regulatory issues?

Food additives meet European directives that define:
- A "positive" list of authorized additives (everything that is not expressly permitted is prohibited);
- A list of foods to which they can be added;
- Their maximum allowable dose;
- Purity criteria for these products.

The control of additives in food is provided by the Directorate General for Competition, Consumer Affairs and Fraud Control (DGCCRF).


The maximum levels of additives in food are laid down so as not to exceed the acceptable daily intake (ADI): amount of an additive that can be ingested daily without risk to health (in mg / kg of body weight).

What are the different types of food additives?

Nearly 350 food additives are permitted.
Nomenclature distinguishes 24 categories of additives according to their technological effects on the food: colorings, preservatives, antioxidants, sweeteners, acidifiers, acidity, flavor enhancers, emulsifiers, gelling agents, stabilizers, thickeners, baking powders, propellants gas, packaging, anti-caking agents, antifoaming agents, firming agents, charge, melting salts, coating agents, humectants, modified starches, sequestering agents treatment.

The list of authorized additives is long. It takes the form of a code with the letter E (Europe) followed by a number indicating its class numbering from E 100 to E 1518.
For example:
- Colors: E 100 family;

Food additives are they really necessary?

Some additives are essential for both conservation for manufacturing. Such is the case:
